Galentine’s Day Brunch: Celebrate Valentine’s Day with your Gal Pals
Happy Galentine’s Day! In this post, our lovely friend Jennifer Diaz, Wellness Coach/Exercise Physiologist/Health Blogger, shares some delicious recipes for a fun homemade brunch with the gals.

I overheard these words of wisdom the other day, and they’ve really had me reflecting on all of the relationships in my life. As I thought about the people I’m surrounded by on a regular basis, I couldn’t help but feel an overwhelming sense of gratitude. My close group of girlfriends are some of the most supportive and encouraging women I know. We’ve been through many life seasons together, experiencing times of change, growth, heartache, love, loss, failure and success. We are a group of messy, imperfect human beings with differing opinions and distinct life experiences. Each one of us brings unique perspectives and strengths to the table. Although we may not agree on everything, we always show up for each other with the best of intentions, making the lows easier to navigate, and the highs way more fun!
Having a strong community is incredibly beneficial for our overall wellbeing. We are wired for rich, quality connections with other people. When you’re surrounded by people with positive attitudes and behaviors, it increases the probability that you’ll make healthy decisions for yourself. One of my passions is encouraging women to speak kindly to themselves and to one another. It’s important for our overall health and happiness to be intentional about our thoughts and words. Negative self-talk is not only incredibly damaging, but it’s also highly contagious. It only takes one negative comment to lower our self-esteem and leave us feeling depleted.
If we desire to be known for lifting up others, it has to start from within. My ultimate hope is that one day, women fiercely encouraging other women will become the norm. As Athleta’s Power of She motto says, Alone we are strong, united we thrive.
So, as stores began stocking up on ridiculous amounts of pink and red heart-shaped items, my friends and I wanted to take full advantage of this commercialized and potentially cheesy holiday by turning it into a fun and uplifting Galentine’s Day celebration!
With our overall wellbeing in mind, our goal was to make this a physically, mentally, and emotionally healthy party! We made a variety of delicious and healthy foods, and my friend, Amy, created some gorgeous Galentine’s cards for us to fill out and give to one another. As I mentioned previously, we’ve been focusing on the way we speak about ourselves. So she created these cards as a way to make sure we would all leave with feelings of encouragement, empowerment, and confidence.
The cards provided space for us to write to each of our friends, stating why we’re thankful for their friendship, how they add value to the world around them, and what attributes make them beautifully unique. I believe that accepting each other, flaws and all, and lifting each other up, helps create strong and lasting relationships. We had such a fun, positive day!

Sun Dried Tomato & Spinach Frittata
- 8 Eggs
- 2 Cups of Spinach, chopped
- 1 Cup of Shiitake Mushrooms, chopped
- 3 Cloves of Garlic, minced
- 1/2 Red Onion, diced
- 2 TBS of unsweetened Almond Milk
- 1 TBS Herbs de Provence
- 1 tsp Salt
- 2 TBS Olive Oil
- Sun Dried Tomatoes
- Goat Cheese
Preheat the oven to 350 degrees and spray or oil an oven safe pie dish. Heat olive oil in a large skillet over medium heat on the stove. Add garlic, onion, mushrooms and cook for about 5 minutes. Add spinach and cook until it starts to wilt. Then place cooked vegetables in the bottom of the dish. In a large bowl, whisk together eggs, almond milk, salt, and herbs de provence. Once mixed well, pour over vegetables in dish. Add sun dried tomatoes and goat cheese on top, and bake for 35 mins. It will puff up and make sure a toothpick comes out clean. Let cool for 15 minutes before serving.
Pineapple Mint Smoothie
- 3-4 Cups of Fresh Spinach
- 3 Frozen Bananas
- 1/2 fresh Pineapple, cored and chopped
- Juice of 1 Lime
- 8-12 Sprigs of Mint
- 3 Cups of Unsweetened Almond Milk
Add all ingredients to a high-speed blender and blend on high until smooth. Serve immediately.
