Zesty Spring Dish: Lemon and Spinach Pesto Pasta Sauce

Here’s a super simple, quick and nutrient dense recipe that you’ll want to put on everything! Try serving this pesto sauce with zucchini noodles and some chili flakes. I like to save some for later to dab on scrambled eggs or use it to dip raw veggies in. It’s a great way to add a delicious kick to any meal or snack!

Ingredients

  • 3 Cups Spinach
  • 1-2 Cloves Garlic
  • 1/4 Cup Shelled Hemp Seeds
  • Juice of 1/2 Lemon
  • 3-4 Tbs. Olive Oil
  • Salt and Pepper

Fun Fact: Hemp seeds are a complete source of protein with about 3g per tablespoon (about as much as peanut or almond butter).

Directions

  • Add all ingredients to a food processor or blender
  • Adding more olive oil and/or splash of water to blend as necessary
